I love spring, and therefore I love springtime food! Two of my favorite ingredients for spring and summer dishes are lemons & limes, so I decided to post one of my favorite warm weather desserts called Lemonade Stand Pie.
Ingredients: 1/3 c. lemonade drink mix
1/2 c. cold water
2 c. vanilla ice cream, softened
8 oz. whipping cream
1 graham cracker pie crust
Mix lemonade and water; stir until dissolved. Add ice cream. Beat with mixer on low until well blended. Gently stir in whipped topping. Freeze, if necessary, until mixture is thick enough to mound. Spoon into crust. Freeze at least 4 hrs. until firm. Remove from freezer 15 min. before serving.
Great for barbecues!
